Bile juice isalkaline and it emulsifies the fats(just as soap does to an oily cloth).It also makes the food alkaline sothat the pancreatic enzymes thatneed an alkaline medium to act cando their task. Lipase secreted bythe pancreas breaks emulsified fatsinto fatty acids and glycerol.
